Lay summary
Healthy diets are key to optimal health and wellbeing, and poor diets contribute risk factors for global morbidity and mortality and increased non-communicable diseases. Individual and household dietary choices are influenced by many factors, both overt and covert. New conceptualisations of food production, processing and distribution systems such as small-scale regenerative farms can contribute to healthy diets for marginalised individuals and communities. Access to five-plus vegetables a day from regenerative farms and community gardens is an equitable means to improve individual health and nutrition, community food security, and the current challenges to climate stability. We will analyse health system and harvest data and explore ways to influence nutrition and vegetable consumption for improved health.
